
Chickpea Buddha Bowl
This chickpea Buddha bowl is a nutrient powerhouse. Chickpeas provide plant-based protein and fiber, while the vegetables and avocado offer vitamins, minerals, and healthy fats. Ingredients
- 70 g chickpeas (small can)
- 1 cup Gut Nourishing Quinoa
- ½ avocado (sliced)
- 4 cherry tomatoes
- ½ bell peppers (sliced)
- 3 radish (sliced)
- ¼ cup sprouts
- ¼ cup cabbage (finely sliced)
- ½ cup leafy greens
Dressing
- 1 tbsp extra virgin olive oil
- 1 cloves garlic (finely chopped)
- 1 tsp lemon (juiced)
- herbs & spices
Instructions
- Place all the ingredients in a bowl.
- Add dressing and seasoning to taste.
