This mason jar salad is a healthy and convenient meal packed with fiber, vitamins, and healthy fats from the almond butter, nuts, and seeds. The apple, cherry tomatoes, and apple cider vinegar add a touch of sweetness and acidity, while the leafy greens provide a good dose of essential nutrients.

Ingredients
 

  • ½ apple (diced)
  • 1 tomato (chopped)
  • 2 radishes (sliced)
  • 1 celery stalk (diced)
  • 1 cup spinach (or any other leafy greens)
  • 2 tbsp pumpkin seeds (or other nuts & seeds (like walnuts, slivered almonds, flax seeds, etc))
  • 1 tbsp hemp seeds
  • 1 tbsp extra virgin olive oil
  • lemon juice
  • sea salt & black pepper (to taste)

Instructions

  • Add olive oil, lemon juice, salt and pepper into a bowl and whisk. Pour into a mason jar.
  • Add apple to the dressing (so it’s covered and won’t brown).
  • Layer the other ingredients on top and seal.
  • When you’re ready to eat, shake up the jar and enjoy straight out of the jar or pour into a large bowl.

Notes

For Detox, exclude apple and pumpkin seeds.
For Elimination, exclude tomato and pumpkin seeds.
For Sensitive Gut, exclude apple and pumpkin seeds.
