Mason Jar Salad
This mason jar salad is a healthy and convenient meal packed with fiber, vitamins, and healthy fats from the almond butter, nuts, and seeds. The apple, cherry tomatoes, and apple cider vinegar add a touch of sweetness and acidity, while the leafy greens provide a good dose of essential nutrients.
Ingredients
- ½ apple (diced)
- 1 tomato (chopped)
- 2 radishes (sliced)
- 1 celery stalk (diced)
- 1 cup spinach (or any other leafy greens)
- 2 tbsp pumpkin seeds (or other nuts & seeds (like walnuts, slivered almonds, flax seeds, etc))
- 1 tbsp hemp seeds
- 1 tbsp extra virgin olive oil
- lemon juice
- sea salt & black pepper (to taste)
Instructions
- Add olive oil, lemon juice, salt and pepper into a bowl and whisk. Pour into a mason jar.
- Add apple to the dressing (so it’s covered and won’t brown).
- Layer the other ingredients on top and seal.
- When you’re ready to eat, shake up the jar and enjoy straight out of the jar or pour into a large bowl.
