
Salmon Rice Paper Rolls
These salmon rice paper rolls are a light and refreshing option packed with nutrients. Smoked salmon provides omega-3 fatty acids for heart health, while the vegetables add vitamins and fiber for a well-rounded and satisfying meal.
Ingredients
- 6 slices smoked salmon
- 2 rice paper wrappers
- 1 cup lettuce (mixed)
- 1 carrot (grated)
- 1 cucumber (thinly sliced)
Dressing
- 1 tbsp extra virgin olive oil
- 1 tsp lemon juice
- herbs & spices
Instructions
- Place a rice paper wrapper on a plate and run some warm water over it. Pour off excess water.
- Place lettuce leaves, carrots & cucumbers on the wrapper. Add pieces of smoked salmon and dressing, to taste
- Roll it up.
- Repeat with the other wrapper.
