
Buddha Bowl with Satay Chicken
Build your own healthy and vibrant Buddha bowl with this recipe! Marinated chicken gets a delicious sear, nestled amongst a rainbow of colorful vegetables, creamy avocado, and crunchy roasted chickpeas. Drizzle with a flavorful satay sauce for a satisfying and nourishing meal.
Ingredients
- 1 tbsp avocado oil
- 1 chicken breast (cubed)
- ¼ purple cabbage (finely sliced)
- 2 medium carrots (grated)
- 2 handfuls mixed greens
- ½ cup chickpeas (roasted)
- 1 serve Simple Satay Sauce (see Simple Satay Sauce recipe)
Instructions
- Add the avocado oil and ghee to a pan and over medium heat, stir in the cubed chicken breast. Cook for 6-8 minutes or until the chicken is cooked through.
- Once cooked, remove from the heat, add the satay sauce and stir well.
- Add the cabbage, carrot, mixed greens to a bowl and sprinkle with the roasted chickpeas. Place the satay chicken on top and enjoy.
