
Gut Nourishing Buckwheat
Buckwheat is a gluten-free whole grain rich in fiber and plant compounds like rutin. It may benefit gut health, blood sugar control, and even have anti-inflammatory properties. Batch cook buckwheat in advance for a quick healthy base for salads and mains.
Ingredients
- 1 cup buckwheat
- 2 cups vegetable stock
Instructions
- Rinse the buckwheat under cold water before cooking.
- Place buckwheat and and stock in a medium-sized pan with the water, and bring it to a boil over high heat.
- Once it is boiling, cover and lower heat. Let it simmer for about 20 minutes and most of the stock has been absorbed.
- Turn off the heat, stir well, cover and allow to rest. The remaining water will be absorbed without drying out the buckwheat.
- Once the stock has been absorbed, stir and transfer it to a glass dish. Cover and store it in the fridge until you're ready to use.
Notes
If you’re not sensitive to bone broth, you can use bone broth instead of vegetable stock.
