
Gut Nourishing Quinoa
Quinoa is a complete protein source high in fibre and antioxidants, making it a nutritious grain that may support gut health, blood sugar management, and heart health. Batch cook quinoa for quick & easy salads and mains during the week.
Ingredients
- 1 cup quinoa
- 2 cups vegetable stock
Instructions
- Rinse dry quinoa with cold water.
- Place the quinoa and stock in a medium-sized pan, over high heat, and bring to a boil.
- Once boiling, turn off the heat and cover the pan with a lid. Allow to sit (with no heat), and the quinoa will continue to cook and soak up the stock. This usually takes 15-20 minutes.
- Once the stock has been absorbed, transfer it to a glass bowl, cover and store it in the fridge until you're ready to use.
Notes
If you’re not sensitive to bone broth, you can use bone broth instead of vegetable stock.
