
Cucumber Bruschetta Bites
These healthy bruschetta bites are a delicious and refreshing appetizer that is packed with nutrients. Cucumbers are a good source of vitamins and minerals, tomatoes are rich in lycopene, and basil is a powerful antioxidant. This dish is also low in calories and fat, making it a guilt-free way to enjoy a tasty snack.
Ingredients
- 1 cucumber (small)
- 1 tomato (diced)
- ¼ cup basil leaves (finely chopped)
- 1 tsp lemon juice
- 1 tsp extra virgin olive oil
- 2 tsp hemp seeds
- sea salt & black pepper (to taste)
Instructions
- Slice the cucumber into rounds.
- In a medium bowl, combine all of the remaining ingredients.
- Top the cucumber with the bruschetta mix.
- Sprinkle with hemp seeds.
Notes
For Elimination, exclude tomatoes.
