
Baked Potatoes
Simple, healthy and delicious baked potatoes for a nourishing side dish that so easy to make.
Ingredients
- 1 kg potatoes (use mini potatoes or chop them into chunks, but keep the skin on)
- 4 tbsp coconut oil
- sea salt & black pepper (to taste)
Instructions
- Preheat the oven to 425°F (220°C).
- Scrub the potatoes. Boil them until they are soft. How long depends on their size. Stab a potato with a fork. If the fork can penetrate the potato, they are done.
- Drain the potatoes then toss the potatoes in coconut oil and season with sea salt and black pepper.
- Place the potatoes in a roasting pan and roast them for about 15 minutes.
