
Quinoa with Eggs & Greens
Quinoa is a versatile grain that's packed with protein and fiber, making it a great choice for a healthy breakfast. Pairing it with eggs and greens creates a well-rounded meal that's both satisfying and nutritious.
Ingredients
- 1 eggs
- 1 tbsp coconut oil
- 1 cloves garlic (minced)
- 2 cups baby spinach
- ½ cup quinoa (cooked – see Gut Nourishing Quinoa recipe)
Instructions
- Add the coconut oil to a small frying pan, and over low-medium heat, add the minced garlic and baby spinach. Sauteé for 3-4 minutes, until wilted, then transfer to a small plate and set aside to keep warm.
- Using the same pan over medium to high heat, add the 2 eggs and fry for 4-5 minutes or until cooked to your liking.
- Add the cooked quinoa to a bowl and top with the wilted spinach and fried eggs. Season with salt and black pepper to enjoy.
