
Avo & Egg Mash
This flavorful avocado and egg mash is a fantastic way to start your day. Packed with essential nutrients, it provides a good source of protein, healthy fats, fiber, and antioxidants. Eggs are nutrient dense and keep you feeling of full for longer. Enjoy this delicious and nourishing dish as a quick and easy snack or even for breakfast or a light lunch.
Ingredients
- 3 eggs (boiled)
- 1 cloves garlic (minced)
- 1 avocado
- 1 tsp lemon juice
- 1 tsp olive oil
- ¼ cup coriander leaves (chopped)
- sea salt & black pepper (to taste)
Instructions
- Place the eggs in a pot with enough warm water to cover all the eggs)and cook for 5 and a half minutes after the water has boiled. Remove the eggs and place them in cold water to stop the cooking process. Once cooled, peel and roughly chop the eggs and put in a bowl.
- Add the minced garlic to the eggs.
- Half the avocado, remove the stone and mash lightly. Place the avocado and coriander in the bowl. Drizzle with lemon juice and olive oil.
- Season everything with salt and pepper, and mix gently. Garnish with more coriander.
- Serve immediately on bread or crackers or on its own.
