
Sweetcorn Fritters
Sweetcorn Fritters are a delicious and nutritious snack or appetizer. Made with organic sweetcorn, buckwheat flour, and fresh herbs, these fritters are packed with flavor and fiber. They're a great way to enjoy the sweetness of corn in a healthy and satisfying way.
Ingredients
- 280 g sweetcorn (organic, drained)
- 1 bunch coriander leaves (chopped)
- 1 lemon (zested)
- 1 cup buckwheat flour
- 185 ml cold water
- 4 tsp coconut oil
- sea salt & black pepper (to taste)
Instructions
- Place the sweetcorn in a large bowl. Add the chopped coriander and lemon zest, season with salt and pepper. Next, add in the flour and water and mix well until smooth.
- Heat 2 teaspoons of the coconut oil in a large frying pan on high heat. Once the pan is hot, ladle in the mixture. Cook the fritters in two batches of 4, or divide the oil accordingly if your pan is not big enough (½ teaspoon of oil per fritter).
- Cook for about 2-3 minutes on each side until browned. The batter makes 8 medium sized fritters.
- Serve with a side of avocado and chili yogurt (optional).
