
Tofu & Green Pea Mash
This light and refreshing tofu and green pea mash is a delicious and healthy vegan meal. Packed with protein, fiber, and essential nutrients, it's a satisfying dish that's perfect for a filling snack or a quick and easy lunch or dinner.
Ingredients
- 100 g green peas (frozen)
- 50 g tofu (non-GMO, organic sprouted)
- ¼ avocado
- ¼ mint leaves
- 1 tbsp extra virgin olive oil
- 1 tbsp lemon juice
Instructions
- In a large bowl, place the frozen peas with boiling water and wait a few minutes until defrosted. Then drain and transfer the peas into a blender.
- Drain the tofu. Crumble the tofu and add to the peas. Add the avocado, mint, olive oil, and lemon juice. Season to taste with salt and pepper. Blitz everything until a paste has formed. If necessary, add some more mint and lemon to adjust the taste to your liking.
- Serve with toast or crackers (not included in nutrition info).
