
Mashed Potatoes
These creamy Mashed Potatoes are a good source of fiber, vitamins, and minerals, including vitamin C and potassium. They are also a good source of complex carbohydrates, which can help you feel full and satisfied. The coconut oil and coconut milk in this recipe add a healthy dose of fats and flavor.
Ingredients
- 6 potatoes (medium, peeled and cubed)
- 1 tbsp coconut oil
- 2 tbsp coconut milk
- sea salt & black pepper (to taste)
Instructions
- Boil the potatoes in a large pot of sea-salted water until tender, about 15 minutes. Drain the potatoes well and return them to the pot.
- Add the milk, coconut oil, salt and pepper to the pot. Mash the potatoes using a potato masher until smooth and creamy. If needed, add a little more milk or coconut oil until the mash is the consistency you desire.
