
Sweet Potato Puree
Sweet potatoes are rich in fiber, vitamins, and minerals, including vitamin A, vitamin C, and potassium. They are also a good source of complex carbohydrates, which can help you feel full and satisfied.
Ingredients
- 2 sweet potatoes (peeled and cubed)
- 1 tbsp coconut oil
- 1 tsp ground cinnamon
- sea salt (to taste)
Instructions
- Boil the potatoes in a large pot of sea-salted water until tender, about 15 minutes. Drain the sweet potatoes well and return them to the pot.
- Add the coconut oil, cinnamon and salt to the pot. Mash the sweet potatoes using a potato masher until smooth and creamy. If needed, add a little more coconut oil until the puree is the consistency you desire.
