
Creamy Almond Tempeh Bowl
A vibrant, protein‑rich bowl designed to nourish your hormones, digestion, and energy. Ingredients
Tempeh Marinade
- 3 tbsp tamari (or soy sauce)
- 1 tsp maple syrup
- 1 tbsp apple cider vinegar
- 1 tbsp avocado oil
- 1 clove garlic (minced)
- 1 tsp ginger (minced)
- ½ tsp paprika
- 250 g tempeh (crumbled)
Salad Dressing
- ¼ cup creamy almond butter
- 1 tbsp tamari
- ¼ cup lime juice
- 1 tbsp apple cider vinegar
- 1 clove garlic (minced)
- 1 tsp ginger (minced)
Salad
- 4 cups coleslaw mix
- 1 red bell pepper (thinly sliced)
- 1 cup edamame beans (cooked)
- ¼ cup cilantro (chopped)
- 4 stalks green onions (sliced)
- ¼ cup sliced almonds (toasted)
Instructions
- Tempeh Marinade: Mix the tamari, maple syrup, apple cider vinegar, avocado oil, minced garlic, ginger, and paprika in a bowl. Add the crumbled tempeh, tossing to coat. Let it marinate for at least 30 minutes.
- Over medium heat, cook the marinated tempeh cubes in a skillet until golden brown, about 5-7 minutes.
- Salad Dressing: In a bowl, whisk together the almond butter, tamari, lime juice, maple syrup, apple cider vinegar, minced garlic and minced ginger. Add warm water (if required), one tablespoon at a time, until the sauce reaches your desired consistency.
- Divide the coleslaw mix evenly among four bowls and top each bowl with the red bell pepper slices, edamame and cooked tempeh.
- Drizzle the salad dressing over each bowl. Sprinkle with fresh cilantro, green onions and toasted almonds. Enjoy.
