Ingredients
 

  • 10 Medjool dates (pitted and soaked in hot water for 10 minutes)
  • 1 cup oats
  • 1 serve vanilla protein powder
  • 1 tbsp matcha powder
  • ½ cup almond butter
  • 2 tbsp hemp seeds
  • 1 tsp ground cinnamon
  • 2 tbsp unsweetened shredded coconut

Instructions

  • In a food processor, blend the soaked dates until they form a smooth paste, scraping down the sides of the blender if needed. Add the rolled oats and process until they are finely chopped. Add the protein powder, matcha powder, almond butter, hemp seeds and cinnamon.
  • Process until the mixture comes together in a sticky dough. Roll the mixture into small balls, about 2 1/2cm in diameter. Wet hands slightly to roll into the shredded coconut. Place the balls on a parchment-lined tray and refrigerate for at least 30 minutes to firm up. Store in an airtight container in the refrigerator.
