Ingredients
 

  • 340 g large shrimp (peeled and deveined)
  • 2 tbsp extra virgin olive oil
  • 2 tbsp lime juice
  • 1 tbsp honey
  • 2 avocados (diced)
  • 1 cup cherry tomatoes (halved)
  • 1 cucumber (diced)
  • ¼ cup red onion (finely chopped)
  • ¼ cup cilantro (finely chopped)
  • 1 cup quinoa (cooked)

Instructions

  • Season the shrimp with sea salt and black pepper.
  • In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the shrimp and cook for 2- 3 minutes per side, or until pink and opaque. Remove from heat and let cool while you prepare the dressing.
  • Whisk together the remaining 1 tablespoon of olive oil, lime juice, honey, salt and pepper in a small bowl.
  • Combine the cooked shrimp, diced avocados, cherry tomatoes, cucumber, red onion, fresh cilantro and cooked quinoa in a large bowl.
  • Drizzle the dressing over the salad and toss gently to combine. Serve and enjoy.

Notes

  • Shrimp: Low in calories and rich in protein and omega-3 fatty acids. It’s also a great source of essential nutrients like selenium and vitamin B12.
  • No Shrimp: Alternatively, you can use scallops, which are similarly low in calories and high in protein and nutrients, offering comparable nutrition benefits.
