Ingredients
 

  • 1 cup oats
  • ¾ cup plain Greek yoghurt
  • 1 cup milk
  • 2 tbsp almond butter
  • 2 tbsp chia seeds
  • 1 tsp vanilla extract
  • 1 cup frozen strawberries
  • 1 tbsp basil leaves (finely chopped)

Instructions

  • Combine the oats, yoghurt, milk, almond butter, chia seeds and vanilla extract in a bowl. Mix well, cover and refrigerate overnight.
  • Prepare the compote. Place the strawberries in a small pan and simmer over low-medium heat for 5-10 minutes.
  • Stir occasionally until the strawberries break down and the mixture thickens. Stir in the chopped basil. Allow to cool, then store in a covered glass jar in the fridge.
  • In the morning, divide the overnight oats between two glasses and layer them with the strawberry-basil compote. Enjoy!

Notes

  • Chia Seeds: Add protein, healthy fats and fibre, essential midlife nutrients.
