Jennifer Tak
A warm, comforting bowl with a naturally sweet, tart lift, this breakfast dessert blends creamy chia pudding with gently heated raspberries for a cosy, jam‑like swirl. The almond milk keeps it light, while the collagen adds a silky richness and extra nourishment. Topped with bright pomegranate seeds and crunchy crushed cashews, it delivers a beautiful mix of textures and antioxidants. It’s a soothing, fibre‑rich way to start the morning that feels both wholesome and indulgent.

Ingredients

  • ½ cup chia seeds
  • 2 ½ cups almond milk
  • 1 tsp cinnamon
  • 3 serves collagen powder
  • ½ cup frozen raspberries
  • ½ cup pomegranate seeds (for topping)
  • 3 tbsp cashews (crushed for topping)

Instructions

  • Combine chia seeds, milk, and cinnamon in a small pan. Over medium heat, gently bring the mixture to a simmer while whisking frequently to prevent clumping.

  • Divide between bowls and top with the pomegranate seeds and crushed cashew. Enjoy!

Notes

  • Chia Seed Benefits: Chia seeds, with their abundance of fibre, omega-3s, and calcium, offer invaluable support for digestion, weight management, hormonal health, mood, bone health, and overall well-being during perimenopause and menopause.
  • Almond milk: Replace with a milk of your choice.
  • Acai Berry Powder: Add additional nutrients by adding Acai berry Powder to the chia pudding mixture.
  • Leftovers: Allow to cool, then cover and store a glass container in the fridge for up to 3 days.
